Cooking with Dandelion and Thistles


Cooking thistles with Spicy Coconut & Prawns     THISTLES WITH
SPICY PRAWNS & COCONUT

Thistle leaf mid ribs cooked in coconut milk with some red chilli for a bit of heat [author ran out of green chillis, otherwise would have used instead to keep all the veggies green coloured], and cooked prawns added in the last few minutes to heat through. In the outdoors freshwater crayfish would have been ideal.

 

Dandelion & Ham Stuffed Tomatoes

 

DANDELION & HAM STUFFED TOMATOES

Simply, tomatoes scooped out and then filled with chopped gammon ham [which provides saltiness] and pre-prepared dandelions, then topped with a little cheese and baked.

 

Cooking Dandelions with Beef & Mushrooms

 

DANDELIONS WITH BEEF & MUSHROOMS

Pre-prepared dandelion added to mushrooms which have been sweated until they are softened and then combined with browned cubed beef.
